Shrimp, Pork & Tomato Noodles (Bun Tom)

This is one of my favourite noodle dishes growing up. It's a very simple dish that I throw together regularly for a week night meal and my kids love it too. The dish is made of shrimp and pork, stewed in tomatoes to give a slight tangy flavour to the broth and then topped off with fresh dill which elevates the flavour to the next level. DO NOT forget the dill.

Prepare the thick vermicelli noodles according to the package.

Peel and devein the shrimp. If using a larger shrimp, I sometimes butterfly them so they are smaller bites but not necessary.

Cut the pork belly into small bite sized pieces.

Slice the shallots.

Slice the tomaotes.

Re-hydrate the wood ear mushroom and cut into small slices if needed.

Heat up some oil in a pan and cook the pork belly until the fat is rendered. This will take a couple of minutes.

Once there is some browning on the pork belly, add the shallots and shrimp. Cook for 2 minutes. Then add the tomatoes, wood ear mushroom, fish sauce, sugar and black pepper. Let this cook down on medium heat until the tomatoes have broken down into a sauce.
Taste the sauce. Don't worry if it's a little salt heavy. The broth will balance out that flavour. After making this a couple times you will know what kind of flavours you like. It should be salty, peppery and slightly tangy.

Heat up your chicken broth.
This recipe can also be made with pork broth but I like the sweetness from chicken. You can also add the shrimp shells to the broth for more flavour. Just remember to strain them out.

Prep your bowl. First adding the noodle. Then a couple scoops of your shrimp and tomato mixture. Then top it off with your cilantro, green onions and fresh dill. The dill is really the star of the show. It brings out so much freshness in this dish and changes the flavour profiles. Trust me, the dill makes this dish!!
Pour your hot broth over the noodles and enjoy!
If you've flavoured your shrimp mixuture with enough umami, the unsalted (or lightly salted) broth should tone down all the strong flavours and it should taste balanaced. Add some hot sauce or fresh chillis and we're ready to eat!

2 cartons of chicken broth or homemade chicken or pork broth
Broth
300g shrimp
pork belly
woodear mushroom
3 tomaotes
1 shallot
1tbsp fish sauce
1/4 tsp black pepper
1 tsp sugar

cilantro
green onions
fresh dill
thick vermicelli noodle
