Bitter Melon with Eggs

Bitter melon has become one of my favourite vegetables. As a kid, you couldn't pay me enough to eat it -- I think most asian kids have trauma from it. But now, I love the bitter taste (which doesn't seem so bitter anymore) and I've learned to cook it in a way that is quite enjoyable to me. The flavours from the black bean sauce and eggs help soften the jarring flavour of bitter melon and I could eat up a whole plate myself!

Cut off the ends of the bitter melon and cut lengthwise. Remove the seeds with a spoon. Thinly slice the bitter melon halves on a slight bias.

Soak the bitter melon in salt water for 5 minutes to remove some of the bitterness. If you have never had bitter melon before, it definitely packs and punch! Drain the bitter melon and prep your other ingredients.

Mince the garlic.

Crack your eggs into a bowl and beat them for 30 seconds.

Heat up some oil in a wok/frying pan. Use medium high heat. Add the garlic and fry for 30 seconds. Then add the bitter melon and toss for a couple minutes. The bitter melon will darken in colour and soften as you cook it.

Add your black bean sauce and toss to coat the bitter melon. Black bean sauce is very salty so taste as you cook and add more if desired. Add the sugar to taste to balance out the saltiness. I usually start with a pinch.
* For softer veggies or to speed up the process add a splash of water and cover the pan for 2 minutes.

Once you've reached the desired "crunch", add the eggs and toss until the eggs are fully cooked. This should only take a minute or two. Voila you're done!
